DIY Lettuce Wraps

Happy Post-Christmas season! Even though Christmas is over, you might still be celebrating the holidays for another week or so, before getting back to the January 1st resolutions and your regular routine. Next week we’ll talk about resolutions, but today I thought we’d start with a post-Christmas recipe.

With all of the holiday indulging and celebrating you’re bound to be craving healthy, lighter meal that will keep you energized throughout the season. And just because it;s healthy, doesn’t mean you can;t share with family and friends as you celebrate.

We made this yummy, fun meal before we headed out for our holiday trips and ate it all. It was that good. And after, we felt full, but not weighed down or bloated.

Lettuce Wraps Collage

DIY Lettuce Wraps:

Makes enough for two, but you can always double it up and serve it at your next gathering!

1 head of bibb lettuce

1 cup cooked brown rice

1 package of firm tofu, drained and pressed

1 large carrot, peeled and chopped into tiny pieces

1 clove garlic, diced

1/2 yellow onion, chopped

1/4 cup edamame

1 small green bell pepper, chopped

1/4 cup tamari

1 tbsp agave nectar (or other natural liquid sweetener)

1 tbsp olive oil

Heat olive oil in a large saute pan on medium-high heat. Add onions and garlic to the pan. Saute until cooked but not browned, about 2 minutes. Add in carrots and ginger. Continue cooking for an additional 2 minutes. Crumble you tofu into the pan with your veggies. Pour in the tamari sauce and agave nectar. Add in cooked rice.  Cook for 3 more minutes until thoroughly heated.

On a plate or serving tray, separate the lettuce leaves. Place the veggies and tofu in a serving bowl. Grab a lettuce leaf, scoop in some veggies, wrap it up and enjoy! The bibb lettuce keeps it crispy and the veggies super flavorful.

  1. The pictures look like there is brown rice in the mixture. You didn’t include it in the recipe.
