Chickpea and Cucumber Salad

Some days, you just need a quick lunch you can throw together, feel good about it, and enjoy eating. On the days where I roam around the kitchen, wandering back and forth between the pantry and the fridge, I usually end up making this. It’s like for those minutes I wander, I know there is a good option, I just can’t seem to think of it. And then it hits me. Chickpeas, cucumber, onions, vinegar, yum.

Chickpea and Cucumber Salad

And it really is as simple as that.

Chickpea Cucumber Salad:

1 can chickpeas, rinsed and drained

1/2 cucumber, de-seeded and chopped

1/8 onion (just a tbsp or so) chopped

Balsamic Vinegar to drizzle

Open can. Drain and rinse. Chop veggies. Assemble into a bowl. Drizzle on desired amount of vinegar. Mix together and eat. Lunch in under 5 minutes.

Enjoy!

And on a separate note – The 21-Day End of SUmmer Detox is heating up! There are still a few spots left, so join while you still can! This could be the lifechanging kick-in-the-pants you’ve been waiting for. So why not sign up now?

Peace and Love,
